Tortilla With Tuna And Vegetable fillings






I love tortillas. They don't lack in my fridge and they are quite easy to prepare for breakfasts. You can find out different snacks/meal one could make with tortillas here.

Ingredients




  1. 1/2 tsp. of olive/sunflower/vegetable oil
  2. 2 tins of tuna fish 
  3. Medium size onion
  4. 3 Spring onions
  5. Bell peppers (red, green and yellow)
  6. 4 tortillas

Preparations



  • Drain the tuna fish of all the liquid if possible squeeze them out 
  • Remove the core of the bell peppers and dice them
  • Cut the onion and spring onions
  • In a frying pan, add the oil then heat up 
  • Add the both onions and sauté for about 2 minutes, then add the peppers
  • Fry for another 2 minutes and then add the tuna
  • Stir together and allow on fire for about a minute and the turn off the gas.
  • Then set aside
  • Fold the tortillas as in the picture, the spoon the tuna mix into them
  • Then munch on.

YAM PORRIDGE



Yam is not a frequent meal on my menu but whenever am cooking it, I try to make it very interesting, not just for me but for the family as well. Living in the UK, it is difficult to buy everything I need for my African dishes, due to scarcity. This is why I always seem to cook most of our dishes with fewer ingredients but they come out very beautifully! So here is my take on yam porridge (Ji ngwo-ngwo)!


INGREDIENTS

green vegetable also known as Jamaician callaloo
½ medium size yam
Green vegetable/callaloo (any quantity)
1½ onion
2/3cup of Palm oil
2 knorr cubes
Salt
½ kg of goat meat

PREPARATIONS

Pluck out the leaves of the vegetable from the stem and discard the stem;
wash the leaves and cut them, set aside.

In a medium, add the meat, 1 knorr cube, salt, cut in ½ onion; add water to the meat, just a little above the meat level, and then cook until tender. Remove the meat and set aside. Freeze the stock for future use. Peel out the back of the yam, slice and dice each slice into 4.

In medium pot, put in the yam and add water. The water level should be a little above the yam; add a teaspoon of salt and cook until yam is soft and cooked.
With the aid of a sieve, drain the water and set aside.

In a clean pot, pour in the oil and heat up for couple of seconds, has to be hot enough to fry the onions; then add the onions, fry for few seconds, and then add the meat, followed by the yam and sprinkle half of the knorr cube.

Turn, reduce the gas and cover the pot, this enables the yam soak up a little bit of the palm oil. You could allow this for over a minute; then add the vegetables and the remaining cube, then turn, turn again and again…

The reason for turning as much as one can, is to enable the yam bring out its crumbs which helps the cooking to turn into yam porridge.

Serve hot and enjoy…

Tortilla – Belle’s Touch



 
Tortillas are not something one would find difficult to get in a store. You can create different things with tortillas, they are quite easy and simple to prepare, as snacks or meal. Here is one among many I have created so far.

Ingredients

3 Eggs
1 Tortilla
½ cup of Grated mild cheese
1/3 of whole Cucumber
4 Cherry tomatoes
½ Onions
½ knorr cube
Mayonnaise
1tsp of sunflower oil

Utensils

Grill pan
Frying pan
Spatula
Bowl
Fork

Preparation

  • Chop the onions and set aside
  • Slice the cucumber and cherry tomatoes as on photo, then set aside.
  • Take a bowl and crack in the eggs, the Knorr and beat together with a fork. Then put in the onions.
  • Set a frying pan, pour the oil, allow to heat up for sometime, then pour in the eggs and fry. Once ready, set aside.
  • Place the tortilla flat on the grill pan.  Sprinkle the cheese on one side of the tortilla, followed by the fried egg, cucumber and cherry tomatoes. At this stage, turn on the gas for the pan to heat up.
  • Then flip close the tortilla.
  • Pan-grill each side for approximately 5mins or more (alternate every 2 mins and work with the pan lines to get the pattern you want on your tortilla), depending on how crunchy/brown you want it.
  • Then serve hot.

the two on the left are egg filled and the ones on the right are chicken filled. so you can fill yours with what ever suits you.

SPINACH OMELET





I love eggs. Frying them with vegetables makes  it more exciting for me. 


INGREDIENT:


onions 
spinach
pepper
eggs
knorr seasoning

SPICY AKARA


 

Growing up, akara was one of those breakfasts that we looked forward to eating on Saturday mornings. My father loves this so much, in fact he was the reason we ate akara. My husband on the other hand, does not joke with akara too. Each time I prepare moi-moi, he will always say, “leave some for akara”. So I decided to incorporate akara in our meal roster.

This recipe is quite easy but for those of us living here, might be a bit difficult. Here we go!


INGREDIENTS


Salt
1 onion
1 pepper
Frying oil for deep-frying
1 cup of Nigerian brown beans or black-eyed beans

Method

Soak the beans in warm water for about 5-10 minutes. Drain, the briskly rub the beans between the palms of your hands to remove the skins.

Return the beans into a bowl, top up with cold water, so the skin floats to the surface. Discard the skins. Repeat this process until all the skins are cleared.

Soak the beans in a boiled water and leave for 6 – 8 hours or overnight.

Place the beans in a blender or food processor with ½ onions, add very little water about 3 tablespoons. Process to make a thick paste. Pour the mixture in a bowl and whisk for few minutes.

Cut the pepper and remaining onions, add into the mixture, add salt to taste or a cube of knorr. Whisk for a few minutes.

Heat the oil in a large frying pan or wok, spoon mixture and fry for about 4 minutes or until golden brown, Drain on kitchen paper and the serve.

VEGETABLE OMELET



VEGETABLE OMELET

INGREDIENTS

Olive oil
Pinch of salt
Onions - cubed
Spring onions - sliced
Tomatoes – cored and cube
1 medium sized pepper - sliced
3 eggs + 1 Knorr cube – well beaten 
Crisp young lettuce – lightly chopped


PREPARATIONS

In a frying pan, add 1/3 of tablespoon of olive oil, allow heating for some seconds. Pour in the beaten eggs; add onions and pepper, spreading them proportionally on the egg. Reduce the gas heat to medium, so the egg cooks slowly.


       
Once the egg starts to take shape, lay the tomatoes, spring onions and young cabbage leaves on one side of the egg and use the other side to cover it up, so that the ingredients remain inside.

        

Now flip it over and press the omelet with the spatula, so the heat goes inside enabling it cook properly. It doesn't have to be perfect or pretty.


The whole process takes about 8 – 10 minutes max.

This omelet is a healthy option for those of us that love eating eggs.

AMAZING PANCAKES



  
Pancakes + Mackerel + sausages

Ingredients

1 cup of flour
2 eggs
2 tbsp. of melted butter
Pinch of salt
200 mls of milk
55 mls of water

For serving

Chicken sausages
2 tins of mackerel fillets
1 pepper

Preparations

In a bowl, sift in the flour. Add a pinch of salt and make a well in the middle of the flour.

Break in the eggs and whisk together. Add the water into the milk and gradually add small quantities while still whisking.

Whisk until the all the liquid mixture has been added and the batter has the consistency of a thin cream.

Melt the butter in a frying pan. Spoon 2 tbsp. of it into the batter and whisk until it mixes together. Use the remainder of the butter to grease the frying pan before making the pancakes.

Heat up the pan then turn it down to the medium. Ladle 3 tbsp. of the batter into the hot pan all in a go, tip it around from sides to sides. This is to help get the base evenly coated with batter.

After about half a minute or when the bottom is golden brown, flip the pancake over. The other side will only need few seconds to cook.

Slide the pancake out of the pan and onto a plate.

To serve

In a frying pan, warm up the sausages.

Drain all the oil from the mackerel, empty the content into a bowl. Cut the pepper and add into the fish, mash together. Set aside

Sprinkle each pancake with caster sugar and lemon. Put the sausage at the edge of the pancake, then followed by the mackerel and roll.

Enjoy 

NB: one can use sardine or any other fish. I buy the mackerel fillets from Lidl.
you can also use soup spoon to scoop the batter into the pan.
