Pancakes + Mackerel + sausages
Ingredients
1 cup of flour
2 eggs
2 tbsp. of melted butter
Pinch of salt
200 mls of milk
55 mls of water
For serving
Chicken sausages
2 tins of mackerel fillets
1 pepper
Preparations
In a bowl, sift in the flour. Add a pinch of salt and make a
well in the middle of the flour.
Break in the eggs and whisk together. Add the water into the
milk and gradually add small
quantities while still whisking.
Whisk until the all the liquid mixture has been added and the
batter has the consistency of a thin cream.
Melt the butter in a frying pan. Spoon 2 tbsp. of it into the
batter and whisk until it mixes together. Use the remainder of the butter to
grease the frying pan before making the pancakes.
Heat up the pan then turn it down to the medium. Ladle 3 tbsp.
of the batter into the hot pan all in a go, tip it around from sides to sides. This
is to help get the base evenly coated with batter.
After about half a minute or when the bottom is golden brown,
flip the pancake over. The other side will only need few seconds to cook.
Slide the pancake out of the pan and onto a plate.
To serve
In a frying pan, warm up the sausages.
Drain all the oil from the mackerel, empty the content into a
bowl. Cut the pepper and add into the fish, mash together. Set aside
Sprinkle each pancake with caster sugar and lemon. Put the
sausage at the edge of the pancake, then followed by the mackerel and roll.

NB: one can use sardine or any other fish. I buy the mackerel fillets from Lidl.
you can also use soup spoon to scoop the batter into the pan.
